Here is some Malabar Spinach We grew last year and didn't harvest because we didn't know what it was. Next year we will know better. We are still learning. And one thing we learned is some of our neighbors can bullshit when they don't know what it is.

I found a recipe on the Internet, but it was full of Fat, so here is what I intend to do in order to make it a consciously healthy choice. I haven't made it yet, but it sure looks like my version will be tasty. Farm-Fresh Malabar Spinach With Broccoli, Red Onions in Garlic Coconut Cream SauceIngredients: 2 c. broccoli florets ½ red onion, sliced thin or diced large 2-3 cups of well-packed Malabar spinach( you can also substitute a different variety) 2 Tbsp. walnut oil for a nutty flavor (or you could use clarified butter) 3-4 cloves garlic, chopped 2-3 Tbsp. flour ( or you could experiment with your favorite Gluten Free Flour) The original recipe called for 2 tbsp of flour, but since we are not using heavy cream and milk, we might need more for coconut milk. 1/2 cup of canned coconut milk 1/2 cup of coconut cream season to taste... I use Mrs. Dash Southwest Chipotle seasoning in order to, as Emeril would say "kick it up a notch" I plan on making this with regular spinach because the Malabar is in Tennessee and I am in Florida. I will let you know how it turns out. Directions Steam the veggies starting with the broccoli because it takes longer. Then add the onions and lastly add the Malabar Spinach. Do not overcook the Malabar Spinach. It tends to get slimy. Meanwhile, heat the oil in a small saucepan over medium-low heat. Add the garlic and saute until soft. Whisk in the flour. Continue whisking until the color changes to a light brown. Next add the coconut milk.Whisk until the sauce begins to thicken. Remove from heat. Season the hot veggies. Fold the sauce into the veggies, or serve the sauce on the side, since some people like a lot and some like a little. Serves 4 as a side dish. I think this would be a delicious addition to a nice piece of Salmon, or chicken. If you have any leftover sauce, it will keep in the refrigerator for a few days. A friend of mine sent me this recipe. I wish I could remember who it was.
Apple Raisin Bread
3 cups all purpose flour (or use half white, half whole wheat) 1-1/2 tsp cinnamon (I also throw in about a tsp of nutmeg, and a little more cinnamon) 1 tsp baking soda 1 tsp salt 1/2 tsp baking powder (combine the above in a medium bowl) 1 egg, and 4 egg whites 1-1/2 cups sugar (I use half white, half brown) 1 cup applesauce (unsweetened) 1 tsp vanilla (whisk the above in a large bowl) 3 finely diced apples, Granny smith are best (I dice one, then grate the rest) 1/2 cup raisins (dark or golden)
Combine dry ingredients with wet, just until mixed, fold in apples and raisins. Pour into lightly greased loaf pans, bake at 350 for one hour, or until done. (I found that 55 mins was just right in my oven.) The key is to not overwork the dough, or it will be tough. ENJOY!!

This is one of my easiest healthy recipes. Judi's Chicken Salsa & Rice1. 2 chicken cutlets cut into medallions 2. Dipped into coconut milk and then bread with gluten free corn breading or one of your choosing 3. Brown on both sides in olive oil 4. Pour 3/4 of a 20 oz bottle of salsa over chicken 5. Sprinkle one cup of shredded cheddar cheese on top 6. Cover pan and cook for 15 minutes or so on medium low until an in internal temp of 165 is reached and cheese is melted. 7. Prepare rice or quinoa according to package directions then mix in remaining salsa Voila! Dinner is done.
